2009 – Giachino - “Altesse” – Savoie AOC, 100% Altesse

2. Yellow tomato gazpacho, basil oil, dungeness crab-stuffed fried squash blossom
2008 – JP & B Droin – Chablis AOC, 100% Chardonnay

3. Olive oil poached wild salmon, slow-roasted heirloom tomato, black olive-aioli, crispy chickpeas
2009 – Mas Christine Blanc – Cotes de Rousillon AOC, Marsanne/Roussanne/Grenache Gris/ Maccabeu/Carignan Blanc

4. Roasted sablefish, romesco broth with steamed clams, pearl couscous, braised local onions, herb salad, pantelleria capers
2009 – Domaine de L’Hortus - “Bergerie Classique Blanc”, Vin de Pays du Val Montferrand, 30% Chardonnay, 30% Sauvignon, 30% Viognier, 10% Roussane

5. Local milk panna cotta, roasted peach, pecan nougatine, blueberries
2008 – Coume de Mas – Banyuls Blanc AOC, Grenache Gris & Grenache Blanc
